Rajah Fish Seasoning is a carefully crafted seasoning blend designed to bring authentic flavour to your cooking.

Fish is the one protein that punishes heavy seasoning. This blend keeps the spice count low and leans on pepper instead — both black and white.

White pepper is the detail worth noticing. It is hotter and earthier than black, and it disappears into pale flesh where black pepper would speckle it. Celery and onion round out the savoury side.
Iodised Salt, CELERY Powder, Ground Black Pepper, Onion Powder, Paprika Powder, Flavour Enhancer (E621), White Pepper.

Score whole fish, season inside and out, and leave 20 to 30 minutes — any longer and the salt starts to firm the flesh. Good on tilapia, croaker, mackerel and catfish, fried, grilled or baked. Add a squeeze of lime at the table rather than before cooking.
