A sprinkling seasoning rather than a cooking one, and the two percentages on the pack tell you how it is balanced: 8.9% chilli against 1.4% lemon flavouring.

Chilli and citrus is a pairing that turns up wherever there is street food, from Lagos suya tables to Mexican elote. The citric acid alongside the lemon keeps the sourness sharp instead of sweet.
