Haldi is the colour in curry. Ground from the dried rhizome, it is earthy and slightly bitter, and its job is as much visual as it is about taste — it is what makes Caribbean curry yellow.

It is also the most staining spice in the cupboard, which is worth knowing before it meets a worktop.

Add it early, into hot oil with the other ground spices, so the raw edge cooks off. Use it sparingly: too much turns a dish bitter and chalky rather than more yellow. Half a teaspoon colours a pot for four.
