For Perfect Jollof Rice: Wash rice 3-4 times until water runs clear. Parboil for 5 minutes, drain. Add to your jollof sauce with stock. Cook covered on low heat for 30-40 minutes.

For Coconut Rice: Cook rice in a mixture of coconut milk and water with salt and a pinch of sugar.
