Salt-cured beef in a 340g tin, halal certified. Corned beef earns its place in an African kitchen by being ready when nothing else is — the tin that turns rice, yam or bread into a meal without a trip to the shop.

Bigi Mama is a West African staple brand, and this is the everyday size: enough for a family stew or two servings of corned beef and eggs.

Halal
Corned beef arrived in West Africa through colonial trade and stayed because it solved a real problem: meat that keeps without a fridge. It is now its own thing rather than a substitute for anything — fried down with onion, pepper and tomato until the strands separate, eaten with white rice, yam, plantain or bread.

The name has nothing to do with corn. It comes from the coarse grains of salt — corns of salt — that the beef is cured in.

340g. Halal certified. Ingredients as printed on the tin — check the pack you receive if you are avoiding something.
Fry a chopped onion in a little oil, add pepper and tomato, then break the corned beef in and stir until the strands loosen and colour. Five minutes is enough; it is already cooked, so you are only warming and seasoning it.

Standard with white rice, boiled yam, fried plantain or bread. It also works stirred through jollof at the end, or with scrambled eggs.
