Tusk stockfish (panla in Yoruba) is a variety of dried fish made from tusk or cusk, widely used across Yoruba cooking. Lighter and less intense than cod stockfish, panla is the everyday dried fish of Lagos and the southwest, essential in Ewedu soup, Gbegiri, and countless daily meals.
100% air-dried tusk fish
Soak in warm water for 4-8 hours until softened. Can be boiled or fried before adding to dishes. A must-have for Ewedu and Gbegiri soup (the classic Abula combination). Also excellent in Tomato Stew, Pepper Sauce, and Okra Soup. Fry pieces for a crispy snack.
