For kenkey: Divide corn dough into portions. Wrap each portion in corn husks or banana leaves, tying securely. Boil in water for 2-3 hours until firm. Serve with fried fish, ground pepper sauce (shito), and sliced onions and tomatoes. Can also be used as a base for banku when mixed with cassava dough.
