Banku is Ghana's most popular swallow — a fermented corn and cassava dough that's cooked into a smooth, slightly tangy ball. Making banku from scratch requires skill and patience, stirring the heavy dough continuously over heat. Mix banku flour with cold water to form a smooth paste. Bring additional water to a boil in a heavy pot. Add the paste gradually, stirring continuously with a wooden banku stick. Cook over medium heat, turning and folding the dough for 15-20 minutes until smooth, elastic, and slightly translucent. Shape into balls and serve with tilapia, okro soup, or pepper sauce.
