Hausa koko is a spiced millet porridge that's Ghana's favorite breakfast. Sold by street vendors in the early morning hours, this warm, peppery porridge is traditionally served with koose (bean cakes) or bread. Named after the Hausa people of Northern Ghana, this porridge has become a national treasure enjoyed across all ethnic groups. The combination of millet with ginger, cloves, and pepper makes it both warming and nourishing.

Mix 3-4 tablespoons of Hausa koko flour with cold water to form a smooth paste. Bring 2 cups of water to a boil, then gradually stir in the paste.
