Tuo Zaafi (TZ) is the iconic dish of Northern Ghana, a thick corn-based swallow that's the pride of the Dagomba, Mamprusi, and other northern ethnic groups. Made from corn flour cooked with water and a touch of cassava, TZ has a unique firm yet slightly sticky texture. It's traditionally served with ayoyo soup (jute leaf) or green leaf soup with dawadawa (locust bean), creating a meal that's both filling and deeply satisfying.

Bring 3 cups of water to a boil. Stir in TZ flour gradually, mixing vigorously to prevent lumps. Cook over medium heat for 15-20 minutes, stirring continuously until the mixture is very thick and pulls away from the sides of the pot. Shape into balls using a wet wooden ladle. Serve with ayoyo soup, okro soup, or green leaf soup.
