Ogi (pap or akamu) is a traditional fermented cereal pudding made from maize, a breakfast staple across Nigeria. White ogi, made from white corn, has a mild, tangy flavour beloved by both adults and babies — it's often one of the first weaning foods given to Nigerian infants. Served warm with milk, sugar, or alongside akara (bean cakes), ogi is comfort in a bowl.

Thaw and dissolve in a small amount of cold water to make a smooth paste. Pour boiling water over the paste while stirring continuously until it thickens into a smooth pudding. Sweeten with sugar or honey. Serve with milk, moin-moin, or akara. Can also be cooked thicker as a base for savoury dishes.
