Achi is a traditional Igbo thickener made from the seeds of the Brachystegia tree, used to give soups a rich, creamy consistency. In Igbo cuisine, achi is the preferred thickener for Oha Soup, Nsala (White Soup), and Bitter Leaf Soup. It produces a lighter, more delicate texture than cocoyam or ede, allowing the flavours of the soup to shine.
100% ground achi seeds (Brachystegia eurycoma)
Mix 2-3 tablespoons of achi powder with a small amount of water to form a smooth paste. Add to soup while stirring to avoid lumps. Cook for 10-15 minutes to allow thickening. Use in Oha Soup, Nsala (White Soup), Bitter Leaf Soup, and Banga Soup. Adjust quantity for desired thickness.
