Cassava dough is a fermented staple that forms the base of several beloved West African dishes. In Ghana, it's an essential ingredient for banku (when mixed with corn dough) and for making agbelima — a tangy, fermented cassava paste used in traditional cooking. The fermentation process, developed over centuries, not only preserves the cassava but creates the distinctive sour flavor that West Africans love in their swallows.

For banku: Mix equal parts cassava dough and corn dough with water. Cook over medium heat, stirring continuously for 20-25 minutes until smooth and elastic. For yakeyake: Steam cassava dough in banana leaves and serve with stew. Can also be used to make kokonte-style dishes when dried and reconstituted.
