Kokonte — also called 'face the wall' in Ghanaian humor because of its dark color — is a traditional Ghanaian swallow made from dried cassava. Despite the playful name, kokonte is deeply loved and proudly served with groundnut soup or palm nut soup. It's a staple of Ashanti and Brong-Ahafo cuisine, where it's valued for its firm texture and distinctive earthy taste that pairs perfectly with rich, hearty soups.

Bring 3 cups of water to a boil. Gradually add kokonte flour while stirring vigorously with a wooden spoon. Reduce heat to low and continue stirring for 10-15 minutes until the mixture turns dark brown and becomes smooth and firm. Shape into balls and serve with groundnut soup, palm nut soup, or light soup with goat meat.
