Stockfish (okporoko in Igbo) has been a prized delicacy in Nigerian cuisine for centuries, originally traded along ancient routes from Scandinavia. Air-dried cod becomes concentrated in flavour and protein, making it the star of festive soups like Pepper Soup, Ogbono, and Egusi. No celebration feast in southeastern Nigeria is complete without stockfish.

Soak stockfish in warm water for 12-24 hours until softened, changing water periodically. Boil for 20-30 minutes until tender. Break into chunks and add to soups and stews. Essential in Pepper Soup, Egusi, Ogbono, Banga Soup, and Oha Soup. Can also be used in fried stews and porridge yam.
