Chilli appears twice in this list — crushed and ground — which is what gives it both an immediate bite and a slower burn underneath.

What stops it being only hot is the company it keeps: coriander and cumin for body, mustard and caraway for a sharper edge, red bell pepper for sweetness, and rubbed mint, which is unusual in a hot blend and lifts the whole thing.
