    Pepper soup is a light, intensely aromatic West African broth built on a blend of ground seeds and spices rather than on chilli heat alone. It is thin by design — closer to a clear, fragrant broth than to the thick soups eaten with swallow.

    It is served at celebrations and after childbirth, ordered late at night, and made at home whenever someone is under the weather. Goat, catfish and chicken are the usual choices, and the method barely changes between them.

    What you need

    • 1kg goat meat, catfish or chicken
    • 2 tbsp pepper soup spice mix
    • 1 onion, chopped
    • 1 thumb ginger, grated
    • 3 cloves garlic, crushed
    • 1–2 scotch bonnet peppers
    • 2 stock cubes
    • 1 handful scent leaf (nchanwu) or basil
    • Salt to taste

    How to make it

    1. Wash the meat or fish thoroughly. For catfish, rinse with hot water to firm the skin so it holds together in the pot.
    2. Put the meat in a pot with the onion, ginger, garlic and a stock cube. Add just enough water to cover.
    3. Bring to a boil, then simmer until the meat is tender — around 35–40 minutes for goat, 15 for chicken. Catfish needs only 10–12 minutes and should be added later.
    4. Stir in the pepper soup spice mix and the scotch bonnet. Simmer for another 10 minutes so the spices open up into the broth.
    5. Taste and adjust salt and heat. The broth should be thin, sharp and aromatic — pepper soup is a broth, not a thick soup.
    6. Add the scent leaf in the last two minutes, off the heat if possible, so its aroma stays bright. Serve very hot in bowls.
