Okazi (afang or fumbua) leaves are a prized delicacy across southern Nigeria and Central Africa. In Cross River and Akwa Ibom states, Afang Soup made with these leaves is a celebrated dish, rich and earthy. In Congo, fumbua is equally treasured. The leaves are shredded finely to release their full flavour and create a hearty, satisfying soup.
100% frozen okazi (Gnetum africanum) leaves
Thaw and shred finely (or use pre-shredded). For Afang Soup: combine with water leaves, palm oil, crayfish, periwinkles, and assorted meats. Cook for 20-30 minutes. Can also be prepared as Okazi Soup or Eru (Cameroonian style with water fufu). Serve with fufu, garri, or pounded yam.
