Tusk stockfish (panla in Yoruba) is a variety of dried fish made from tusk or cusk, widely used across Yoruba cooking. Lighter and less intense than cod stockfish, panla is the everyday dried fish of Lagos and the southwest, essential in Ewedu soup, Gbegiri, and countless daily meals.
