Semolina holds a special place in Nigerian cuisine as the base for 'semo' — a popular swallow that rivals pounded yam in popularity. Made from durum wheat, semo is loved for its smooth, slightly elastic texture and mild taste that complements any soup beautifully. In many Nigerian homes, semo is the everyday swallow of choice because of its quick preparation time and consistent results. It's especially popular with egusi, ogbono, and vegetable soups.

For semo (semolina swallow): Bring 2 cups of water to a boil. Gradually add semolina while stirring vigorously with a wooden spoon. Continue stirring for 3-5 minutes until smooth and firm with no lumps. Shape into balls and serve with your favorite Nigerian soup — egusi, ogbono, bitterleaf, or efo riro.
