Abacha (African Salad) is a beloved Igbo delicacy made from dried shredded cassava. When soaked and mixed with palm oil, potash, ugba (oil bean), crayfish, utazi leaves, and garden eggs, it becomes a colourful, flavourful salad served at celebrations, meetings, and family gatherings throughout southeastern Nigeria. 100% dried shredded cassava (abacha)
Soak dried abacha in warm water for 10-15 minutes until softened. Drain thoroughly. Mix with ugba (oil bean), palm oil dissolved with potash (kaun/akanwu), crayfish, utazi leaves, garden eggs, onions, and seasoning. Garnish with stockfish and ponmo. Serve at room temperature as a salad or snack.
