Dried iru (locust beans) is the shelf-stable version of Africa's most powerful natural seasoning. While fresh iru is intensely pungent, the drying process mellows the aroma while preserving the deep umami flavour. Known as dawadawa in Ghana and ogiri in some Nigerian dialects, this fermented condiment is irreplaceable in authentic West African cooking.

Soak dried iru in warm water for 10 minutes to soften, or crush and add directly to cooking. Essential in Ewedu, Gbegiri, and Ogiri-based soups. Add to vegetable stews, bean dishes, and rice for umami depth. Use 1-2 tablespoons per pot. Crush between fingers to release flavour before adding.
