Fufu is the beloved starchy accompaniment that completes every West African soup. Traditionally made by pounding boiled cassava and plantain in a large wooden mortar, the rhythmic 'thump-thump' of fufu pounding is one of the most iconic sounds of West African villages. These instant fufu flakes honor that tradition while making preparation quick and easy — just add hot water for smooth, stretchy fufu in minutes.
Dehydrated cassava flakes (Manihot esculenta), plantain flour.
Bring 2 cups of water to a boil. Gradually add fufu flakes while stirring vigorously with a wooden spoon to avoid lumps. Reduce heat to low and continue stirring for 3-5 minutes until smooth and stretchy. Shape into balls and serve with your favorite soup — egusi, palm nut, light soup, or groundnut soup.
