Ground rice is a versatile West African pantry essential used to make tuwo shinkafa (rice swallow), rice porridge, and traditional rice-based snacks. In Northern Nigeria, tuwo shinkafa is the preferred swallow, served with miyan taushe (pumpkin soup) or miyan kuka (baobab soup). Ground rice is also the base for many baby weaning porridges across West Africa, trusted by mothers as a gentle first food.

For tuwo shinkafa: Mix ground rice with cold water to a paste. Stir into boiling water and cook for 15-20 minutes until very thick and smooth. Shape into balls and serve with miyan kuka, miyan taushe, or any Nigerian soup. For rice porridge: Cook with milk and water, sweeten to taste. For babies (6+ months): Prepare thin porridge with water or breast milk.
