For amala: Bring 2 cups of water to a boil. Gradually sprinkle in yam flour while stirring vigorously with a wooden turning stick. Continue stirring over low heat for 5-7 minutes until smooth, stretchy, and dark brown. Shape into balls and serve with ewedu, gbegiri, or ogbono soup.
