Gari is granulated cassava — peeled, grated, fermented, pressed and roasted until dry. Stir it into hot water and it becomes eba, the everyday swallow eaten with Nigerian soups. Soak it in cold water with sugar, groundnuts and milk and it becomes a cooling snack instead.
Poundo iyan is instant pounded yam flour: the smooth, white, slightly elastic swallow that would once have meant a mortar and pestle and a great deal of effort. Here you will also find semolina, cassava flour and the other swallows that sit beside a bowl of soup.
