Madras powder is a South Indian style built for heat, and the hot version puts chilli fourth in the list, ahead of the cumin and fenugreek.

The ingredient people miss is Bengal gram — roasted black chickpea, ground in. It is not a spice at all; it thickens the sauce and softens the raw edge of the chilli, which is why a Madras clings to meat rather than sitting thin.
