Stockfish has been a prized ingredient in Nigerian cuisine for centuries, originally introduced through trade with Norwegian fishermen. Today, it is an indispensable part of soups and stews across West Africa. The dried cod is valued for its intense umami flavor and firm texture that holds up beautifully in long-simmered dishes. In Igbo culture, stockfish (okporoko) is a sign of hospitality — serving soup with generous pieces of stockfish shows respect for your guests.
Dried Atlantic Cod (Gadus morhua). Air-dried, unsalted. No preservatives or additives.
Preparation: Soak stockfish in warm water for 12-24 hours until soft. Change water 2-3 times. Boil for 20-30 minutes until tender. Break into pieces.

For Egusi Soup: Add soaked stockfish pieces to the soup during the last 15 minutes of cooking.

For Ogbono Soup: A classic pairing — the rich mucilaginous soup and firm stockfish are perfect together.

For Pepper Soup: Add to the broth for incredible depth of flavor.

For Edikaikong: Essential protein in this Calabar delicacy.
