Ekwang is one of Cameroon's most labour-intensive and rewarding dishes, originating from the Bakweri people. Grated cocoyam is wrapped around sliced cocoyam in small leaf parcels, then slow-cooked in a rich sauce of palm oil, crayfish, and smoked fish.
