Red cowpeas, known as 'honey beans' or 'ewa oloyin' in Yoruba, are treasured across West Africa for their naturally sweet flavor and creamy texture when cooked. They're a premium variety of cowpea that cooks faster and tastes richer than regular beans. Soak for 4-6 hours or overnight. Cook in a pot with water until tender (about 45 minutes). For beans porridge: Add palm oil, blended tomatoes, onions, scotch bonnet pepper, crayfish, and seasoning. Simmer until thick. Serve with fried plantain, bread, or garri. Also excellent in rice and beans (waakye).
